Which Evil Hunter is the Best for Beginners?

Berserkers are by far the best hunter in the beginning of the game all the way until higher difficulties. 

The reason is because they can max out their attack speed using their Fury skill, which increases their attack speed by 4 times for the duration it's active. The cooldown takes 15 seconds, but each level increases the duration. Eventually at level 10 the duration becomes 15 seconds, meaning you'll doing 4 attacks attacks per second at all times. 

This means you can concentrate on increasing their attack instead of increasing attack speed, making them easily the strongest early game hunter.

Even during the beginning of Torment 1, I find myself using berserkers much more because of the S Tier weapon, Blood Craze, which makes every attack a critical hit. 

My recommendation is to keep as many berserkers as you can to effectively farm the fields, and worry about the other classes towards the end game. 

What about Sorcerers, Paladins, and Rangers?

You'll still need to keep some of the other classes around to do PVP. You can only have 2 of the same class for the 5v5 Colosseum, and 1 of each class for the 2v2. Meaning that the other classes still have their uses, but you'll quickly see that berserkers have the best sustainability thanks to Life Steal. I'd say you only really need one or two of each other class at most until you start getting to end game.

I'm new to the game so what should I do?

If you have the time and patience, you should reroll until you get a good berserker. Some people will go as far as rerolling until they get a legendary berserker. 

It's not entirely necessary, but it will give you a hunter that will be relevant all the way into the late game.

Stats wise, you'll want to aim for a berserker that orange stats in attack, defense, crit, and/or attack speed. In my opinion, attack speed isn't as important for berserkers thanks to Fury, but you'll still want some attack speed to make sure that the stat is at the attack speed cap while fury is active.
